Açaí Avocado Protein Bowl

I’m not a big breakfast person, but sometimes it can be a real treat, especially when it’s a weekend…. and it’s summer… and it’s this refreshing and oh, so good for you.

Not only is this breakfast bowl out-of-this-world delicious, but it has everything your body needs: protein, healthy fats, probiotics, fiber, collagen, and more!

Best part? You don’t have to have it for breakfast. Blend it up for a nutrient-packed lunch or snack.

I always hate long intros, which no one ever reads, so let’s skip right to the actual recipe. Enjoy!



RECIPE

Açaí Avocado Protein Bowl

Serves 2 (See visual recipe below)

Ingredients

The Vitamix is by far one of the best investments I’ve made into kitchen equipment. I have the A-3500 (pictured) but there are less expensive models available (CLICK HERE to check them out on Amazon). Not only is this one of the most used appliances in my kitchen, but it will last a lifetime (unlike all the other blenders I’ve owned, which tend to break down in a year or two).

  • 2 Cups Organic Valley Grass-Fed Organic Yogurt or SO Coconut Yogurt if you’re dairy-free

  • 2 packets of açaí

  • 1 scoop of Perfect Hydrolyzed Collagen Peptides

  • 1 Banana

  • 1 Avocado

  • 2 organic, Pastured Egg, raw

  • 4 organic Strawberries

  • 2 Organic Medjool Dates, Pitted (optional if you like it a little sweeter)

  • Garnish with granola (make sure it’s grain-free and/or not made with any toxic vegetable oils), slivered almonds, organic blueberries or your choice of organic fruits & seeds 

Directions

  1. In your Vitamix blender, combine everything except for the granola, almonds, and blueberries. Blend until smooth.

  2. Pour into bowls, sprinkle with granola, almonds, and garnish with blueberries.

  3. Serve and enjoy
